My Story
My first memory of making food for myself was putting raw tomato paste on a saltine cracker. As I grew up, I realized that food is how I create art and cooking for people makes me glow.
I was born in the suburbs of Chicago and lived in the city for 12 years after college, working as a Sales Engineer for a software company. Being a culinary capital of the world, Chicago taught me what real elevated food is and what exemplary service looks like. Tech was good to me, and I was good at it, but something was missing. I wasn't passionate about tech. Life is too short to not pursue your passions. So I quit my corporate tech job in 2018 and left for the Ballymaloe Cookery School in Shanagerry, Ireland, looking to pivot my life from the standard model. After cookery school, I took time to travel and find myself. One of the influential stops on that journey was Oaxaca, MX. I found work in a mezcal bar and restaurant, serving a 12 course chef's menu. I learned authentic Mexican cuisine and what it actually takes to execute a flawless dinner service.
From there, I found myself in Colorado, eventually settling in Leadville, where I've lived permanently for 5 years. While here I've built a reputation for my public pop up restaurants, food focused charity work, and epic private dinner parties at my home.
My end goal is to run a European Alps style guesthouse with coursed dinner service, targeting winter sports enthusiasts. When the right property comes along, I’ll be ready.
Thank you for reading this far. I would be happy to share more of my story over dinner.
